Ingredients
1 cup THREE JEWELS RICE
1 cup quinoa ¾ tsp sea salt
2 tbsps coconut oil
½ medium red bell pepper
4 cloves garlic (minced)
1 small carrot (diced)
1 stalk celery (chopped)
1 cup corn
1 cup black beans
½ tsp black pepper
2 cups water
4 stalks chive (chopped)
2 sprigs fresh parsley (chopped)
Method
Rice and quinoa should be cooked separately for 5 minutes.
Heat oil in pan over medium heat. Add garlic for 1 minute.
Add bell pepper, carrot, black beans, corn, celery, black pepper and salt. Cook for 2 minutes.
Add cooked rice and quinoa, stir well.
Add parsley and chives. Mix well.
